  • OK mine is a double recipe so half it unless you have a really big pot!!

    4lbs ground beef and 2 chopped onions, browned and drained
    1 regular taco seasoning packet
    1 spicy taco seasoning packet
    2 ranch dressing mix packets
    7oz can of diced green chiles
    1 can diced tomato
    1 can stewed tomato
    2 cans corn
    1 can hominy
    1 can each of low sodium beans:
    - white beans
    - pinto beans
    - black beans
    - lima beans
    - kidney beans

    Do NOT drain any of the canned ingredients. Put all the above in a big pot and simmer for at least an hour. Also works in the crock pot - just put it on low all day. Everything in there is cooked, you just need to simmer it together for a while to get the flavors together. Serve with grated cheddar cheese and tortilla chips, or cornbread. Freezes well!

  • 1 pound of ground turkey
    1 onion
    1 can kidney beans (low sodium)
    1 family size can tomato soup (low sodium)
    1 package of taco seasoning. (low sodium)

    Cook meat and onion together until meat is browned and onion is translucent. Drain and rinse kidney beans. Add to meat mixture and saute for 2 minutes. Add tomato soup and taco seasoning. Simmer 20 minutes.

    Serve with shredded cheese, sour cream and corn tortillas.

    Taco soup recipes tend to be LOADED with sodium so do NOT exchange the low sodium for regular unless you simply canNOT find the low sodium version.

  • 28 oz. diced tomatoes
    2 16 oz. cans pinto or black beans, drained & rinsed
    10 oz. can Rotel tomatoes w/chilies
    8 oz. (1 cup) sweet corn kernels
    1 pkt. ranch salad dressing mix (I have my own recipe that I use)
    1 pkt taco seasoning (I have my own recipe that I use)
    Do not drain the tomatoes. Dump everything in a crock pot, stir and cook on low for 4 hours or 2 hours on high, OR put everything in a large pan, stir, and heat to boiling over medium heat, stirring occasionally. Serve with corn chips or tortilla chips.

  • I agree with miasmommy - I always look for low sodium canned goods for this recipe. Not all the beans come in low sodium but most of them do. I have seen versions where you actually drain the beans and then add water instead - probably a good option if limiting sodium is important to you. But the ranch dressing and taco seasoning already has so much salt, I can't imagine this is a good recipe for those needing to limit their sodium intake :) But it's got great protein!
