What exactly IS yeast?

Making bread today and thought "Hmmmmm."

  • It's a fungus that eats sugar and belches (or farts—they don't have a digestive system like we do) CO2.

  • To put it simply, it makes the bread rise. Otherwise you'd end up with a brick.

  • Yeast are fungus. They eat sugars and "burp" CO2 which raises a dough by adding air to it.
