If I make them for breakfast I might fill them with fruit perserves (apricot is my favorite) and drizzle them with vanilla glaze, or I might fill them with the same fillings I might use in breakfast burritos. If I make them for dinner I usually fill them with chicken and green chili sauce and drizzle cheese sauce over the top; sometimes I also cover them with enchilada sauce and shredded cheese and put them in the oven to melt and brown a little. I've had them before filled with ham and scrambled eggs with hollandaise sauce, but I've never made that.
