I'm pretty good at making yellow rice. I use chicken broth and the box with packets (orange or yellow?) seasoning from the ethnic isle at the grocers. If you're hispanic, you'll know the seasoning I'm using. I can only identify the look of the box. What I do is boil chicken with the seasoning and plenty of salt to make broth. Take the chicken out and bring the simmering broth to a boil. Cook equal parts of long grain white rice with broth by bringing temp back to a low simmer until rice is tender but not split (over cooked). Sometimes, put a tiny bit of oil into the rice. Then I add the chicken on top.
My yellow rice comes out good enough for my hispanic friends. (I'm even surprised at myself since I'm a mideastern/eastEurope mix)
