Looking for great finger food recipe.

I'm taking snacks for our leaders meeting tomorrow night. Any suggestions for yummy finger foods?

  • Tortilla Roll-Ups-
    1 country roast chicken
    8 med red radishes, washed, dried, ends trimmed, coarsely grated
    (1 cup) good-quality whole-egg mayonnaise
    2/3 cup finely shredded fresh mint
    Salt & freshly ground black pepper
    24 slices wholemeal bread, crusts removed
    Remove the bones from the chicken meat, shred it and place it in a large mixing bowl. Add to it the radish, mint and mayonnaise and mix well. Then add the salt and pepper, mix well and keep aside. Place the bread slices in a single layer, spread the mixture on them and top with the remaining slices of bread. Cut the sandwich length ways and hold in place with toothpicks.

  • you could make "crescent dogs" : wrap one hot dog in a crescent roll and bake as directed and cut them up.

  • Coconut Shrimp and Minty Mango Dip
    2 clove garlic
    3 very ripe mangoes, cut into chunks
    1 tablespoon grated lime zest
    1/4 cup fresh lime juice
    1/4 cup cider vinegar
    1 tablespoon Tabasco sauce
    1 tablespoon kosher salt
    1/2 teaspoon freshly ground white pepper
    3/4 cup coarsely chopped mint (about 1 bunch)
    1 1/2 cup(s) white rice flour
    1 1/2 cup all-purpose flour
    4 teaspoon kosher salt
    2 1/2 cup club soda or seltzer water, plus more as necessary
    2 pound large shrimp, shelled and deveined
    4 cup shredded unsweetened coconut
    3 quart vegetable oil or canola oil

  • Directions
    To make dip: In a food processor with knife blade attached, mince garlic. Add mangoes, lime zest, lime juice, vinegar, Tabasco sauce, salt, and pepper. Process until very smooth. Add mint and pulse once or twice, just to combine. Pour into a bowl and cover; refrigerate until serving.
    To make shrimp: Line 2 cookie sheets with waxed paper or plastic wrap. In a large bowl, whisk rice flour, all-purpose flour, and salt to combine. Add club soda and whisk until smooth. Mixture should have consistency of pancake batter; add more club soda if necessary. Spread coconut on a plate. Pat shrimp dry with paper towels; add to batter and toss to coat. Remove shrimp from batter one at a time, letting excess drip off. Dredge in coconut. Place on prepared cookie sheets. Cover with plastic wrap and refrigerate while oil heats, or up to 4 hours.

  • heres one the kids can help with: make sandwhiches, but make a varity, like ham salad, chik salad, lunch meat, whatever, and then have the kids attack the them with cookie cutters. not only do you have finger food, you have fun finger food.(the salads work better then the lunch meat.)

  • Cucumber sandwiches:
    Party rye bread, 4 oz. cream cheese, pkg Good Seasons Italian dressing, cucumber, dill weed
    Mix cream cheese and Italian dressing, spread on the bread, add cucumber slices and sprinkle with dill weed.
    Very light and delicious

  • 3-Pour oil into an 8-quart heavy-bottom pot. Heat over medium-low heat until temperature reaches 350 degrees on a deep-fat thermometer. Carefully drop shrimp into oil, about 8 at a time and fry until golden brown and just cooked through, 1 1/2 to 2 minutes. With a slotted spoon, remove to paper towels, skimming coconut from oil between batches. Serve hot with dip.

    8 oz cream cheese, can shrimp, cocktail sauce
    Lay the cheese on a plate, put the shrimp on the cream cheese and cocktail sauce. Serve with different crackers

  • These are so good. There are never any leftover.
    Hanky Panks
    1/2 lb. ground beef
    1/2 lb. pork sausage(reg.)
    1/2 tsp. garlic salt or powder
    l/2 lb. Velveeta cheese (cubed)
    1 loaf party rye bread (small square slices)
    Brown meat and sausage. Pour off all grease, then add garlic salt and cheese. Stir until all the cheese is melted and well blended. Spread mixture on each slice of bread. (a good tablespoon) Place on cookie sheet and freeze and then put in plastic bags and keep in freezer. Always ready to take out and bake. Bake 400 for 15 min.
