Do I use just green peppers or add the yellow also?

I am making chicken caccaitori and my recipe calls for three green peppers. I know some recipes use both green and yellow. I have one yellow pepper and three green ones. Should I add the yellow to the three green peppers or just use two green peppers and the yellow pepper? Thanks

  • 2 green and the yellow for variety, but you don't want the pepper to overpower the dish. mmmmm, sounds good.

  • I would save the yellow to use in another dish. In cacciatiore, they cook for awhile. The green will retain it's color, the yellow is more delicate in flavor, and color. The flavor will dissappear, the color may get funky looking in the red sauce. If you do decide to use the yellow, add it later than the green.
