Quick meal recipes

Does anyone have any good quick(30min or less) meal ideas? I'd like to try something new instead of the same ol thing.

  • I make a tamale pie that takes about 30 minutes. Brown ground beef and drain. Add a package of taco seasoning and the water the package calls for. Add mexicorn and salsa. Put in a casserole dish or 9x9 pan. Top with prepared Jiffy cornbread mix. Bake according to the mix directions. Serve with salsa and sour cream. Oh, you can also put shredded cheese in the meat mixture too.

    Keep in mind, when you eat at a restaurant, and your meal is fabulous and at your table in five minutes, Half of it was made in advance.

  • Black bean & artichoke burritos from - I add 1 can of corn (drained) and some salsa instead of the tomatoes. I usually use this filling for quesadillas instead of making them into burritos.

  • Chicken fajitas. Cook Chicken breasts with onion, green and red peppers. Season-Dry Italian seasoning is good too.
    Use Costco tortillas - that you cook yourself. Serve with sour cream, cheese, onions, green or red salsa. Easy and fast!
    Serve with refried beans mixed with sour cream. (I can't wait to try the tamale pie:)

  • Here's one that's quick and delicious.
    Chicken & Broccoli Alfredo
    8 oz. uncooked linguine or spaghetti
    1 cup fresh or frozen broccoli florets
    2 tablespoons butter
    1 lb. chicken breasts, cubed
    1 10 3/4 oz. can Cream of mushroom soup (can use fat-free to be healthier)
    1/2 cup milk
    1/2 cup grated Parmesan cheese
    Prepare pasta according to package directions. Add broccoli for last 4 minutes of cooking time; drain. In a medium skillet over medium-high heat, melt butter. Add chicken and cook until no longer pink, stirring often. Add soup, milk, cheese and pasta & broccoli; heat through, stirring occasionally. Serve with extra cheese.
