Do you roast your vegetables before adding to various dishes?

I just roasted the vegetables for a stew I am currently making and boy what a difference it makes in the taste.

  • It really does. I always sautee or roast onions, tomatos, and peppers. I'm starting to experiment with different squashes, and I think roasting will make whatever I am doing with them turn out better.

  • It does make a difference in almost any dish. Roast butternut squash before making soup-much better. I either roast or sautee vegetables for any recipe, even if it doesn't ccall for that to be done. Also toast nuts before adding them to baked goods. That also makes a big difference.
