1 Bump

I made pumpkin-pecan bars and now what do I do with the rest of the pumpkin?

I have about 1 1/4 cups left. Anyone hava a recipe I could have to use it up.

  • I don't have the recipe, but over the weekend I had a pumpkin cake with cream cheese frosting, omg it was so good! I bet you could even make the cake part and freeze it until Thanksgiving, then thaw and frost. Which makes me wonder, can you just freeze the leftover pumpkin?

  • You can freeze leftover pumpkin, but I'm in a baking mood, so I thought I would use it up.

  • Go to allrecipes.com and look up apple pumpkin muffins (if you have apples anyway!). They are the best!
