  • Barbeque Cups
    1 lb. ground beef, pork or turkey
    1 bottle barbeque sauce
    2 cans refrigerator biscuits
    Shredded Cheddar cheese

    Brown ground beef, drain. Return to pan and add sauce, heat through. Flatten each biscuit out and place in muffin tins, to form a cup. Spoon beef mixture into each cup. Cook about 10 minutes (check biscuit can for oven temperature, and reduce by 25 degrees). Remove from oven and add cheese. Return to oven for a couple more minutes, just to melt cheese.

  • Pizza Macaroni Bake

    1 Package mac & cheese dinner mix
    6 cups water
    1 lb ground beef
    1 med. onion, chopped
    1 small green pepper, chopped
    1 cup shredded cheddar cheese
    1 jar (14 oz) pizza sauce
    1 package sliced pepperoni
    1 cup shredded mozzarella cheese

    Cook mac. & cheese according to package. Meanwhile, in a large skillet, cook the beef, onion & gr. pepper until the meat is no longer pink; drain. Transfer macaroni to greased baking dish, top with cheddar cheese. Then, top with beef mixture, pizza sauce, pepperoni & mozz. cheese. Bake uncovered at 350 for 20-25 minutes.

  • Turkey Taco Bake

    2 cups coarsely crushed corn chips
    1 can (16 oz) refried beans
    2 cups shredded monterey jack cheese, divided
    1 cup salsa
    2 cups shredded cooked turkey
    1 tsp taco seasoning
    1 green onion, sliced
    1 medium tomato, chopped

    Place corn chips in a greased shallow baking dish. Place refried beans in a small saucepan, cook and stir over medium heat until heated through. Remove from heat and stir in 1 cup cheese and salsa. Spread over chips.
    In a large bowl, combine turkey and taco seasoning. Sprinkle over bean mixture. Top with remaining cheese. Sprinkle with onion. Bake uncovered at 400 for 20-25 minutes or until cheese is melted. Sprinkle with tomato.

  • Chicken Wild Rice with Greenbean Casserole

    Cubed chicken breast (like 3 breasts)
    1 can of Cream of Chicken Soup (herbed is better but plain works too)
    1 can of Greenbeans
    1 cup uncooked wild rice
    1 cup water

    Mix all ingredients together in baking dish/casserole dish (a small one otherwise double the recipe). Bake at 350 for about an hour till chicken is cooked and wild rice puffs up and is tender. My kids love this.
