  • I make a huge pot of beef stew or chili. Everyone loves it and there is usually enough for everyone! :) If it is last minute and I don't have the time to make those then I usually get a veggie and fruit tray along with chips and dip.

  • A nice salad. I take about 8 cups of mixed spring greens (serves 8 people), 1/2 cup of candied walnuts (take 1 cup of white sugar and 1/2 cup of walnut pieces, combine in a skillet, heat on medium heat til the sugar dissolves and starts to lightly brown, tossing the whole time. Spread on a greased cookie sheet, separate the walnut pieces and let cool), 1/4 cup dried cranberries or cherries, and 1/2 cup crumbled feta cheese. Toss it all together. Serve it with a really really good balsamic vinagrette. It can be made into a full meal by adding sliced steak or grilled chicken breast. Everyone always wants my "recipe" lol.

  • Fresh fruit, or a veggie tray. A few bunches of grapes goes well, as does sliced fruit and berries; with or without some kind of dip.
The veggie trays always needs a dip, be it a ranch or a hummus dip.

  • If I'm in a hurry I grab some chips and salsa. If not I either make cornbread salad or tabouli.
