beef question

what in the world is that disgusting plastic like substance that oozes out of my ground beef or steak when I cook it?

  • Plastic like? The only thing I can think of that oozes out is the water/protein that comes out and turns opaque when it hits the heat.

  • It's the protein, it kinda gels together and looks icky, right? I learned that watching an episode of "Good Eats." It happens to salmon too.

  • yeah, that has to be what it is Jespeach and ThaMCE! it gels, looks icky, and is the same solid color as the beef.
