Can you suggest a recipe using Butternut squash ?

I also have mushrooms and spinach I want to make something

  • All of that would make a lovely soup if you have some meat to make broth and something tomato based to add as well as garlic powder, salt and pepper.....lentils or barley to give it substance...

  • If you are not anti-fried-foods it is amazing! I've been wanting to prepare some myself but the DH always wants something it doesn't go well with.

  • OR stirfry the mushrooms, add the spinach to steam for a few minutes, and add some vineagar or soy sauce , cut squash in half, but real butter in center and bake in oven.....serve with cornbread or rice (I like brown)

  • Cut them diameter-wise so they they are circles. You can do it really thin if you want them crunchy or thicker if you want it softer. There is no wrong way but I wouldn't do anything wider than 1/4" Start melting some shortening or heating some vegetable oil in a skillet on med-lo heat. In a small bowl (or whatever) put some flour and toss in a little black pepper. You can also add paprika or salt. Dip the squash in the flour (usually you don't have to moisten it but you can in milk) put it in the skillet and cook until browned, turn it once to cook both sides. Promise you if you get started you can't mess it up and you will fall in love! =)
