    Bbq Meatloaf (handy recipe from Makes 2 meatloafs
    1 1/2pounds ground beef
    1 1/2 pounds ground pork
    2 cups dry bread crumbs
    1 cup finely chopped sweet onion (such as Vidalia®)
    1 egg, beaten
    1 teaspoon Worcestershire sauce
    1 teaspoon minced garlic
    1 teaspoon dried tarragon
    1 teaspoon sea salt
    1 teaspoon ground black pepper

    1/2 cup barbeque sauce
    1/2 cup ketchup

  • 5BabyBees we do the same thing. My kids and hubby love "hash". Sometimes I make it for dinner and sometimes breakfast.

  • We like:

    *cooked chicken, tomatoes, cucumbers, lettuce or spinach and a little cheese and dressing in a pita
    *scrambled eggs, turkey bacon, sauteed onion & green pepper, a bit of cheese and salsa in a tortilla
    *turkey meatballs and spaghetti
    *grilled portabello mushroom burgers
    *grilled marinated chicken sandwiches or salad

  • 4-5 chicken breasts
    2-3 tbsp chopped parsley
    2 cups chicken broth
    1 tsp ground pepper (optional but preferred)
    1 container of sliced mushrooms
    Place chicken in pan, add broth, top with parsley, pepper, mushrooms. Simmer for about 30 minutes. The broth brings out the flavor of the chicken and makes it juicy, the mushrooms absorb the broth and juices of the chicken and the parsley adds a nice flavor. My meat hating 5 year old loves this. It's very light, but it's also filling.

  • This is a few more ingredients, but it's so quick & easy. You can easily half or quarter the recipe - I'll list the amounts I use, it makes about 8 quarts, I have a family of 6 and we have (and like) leftovers.
    2 lbs Frozen mixed vegetables
    2 lbs Ground beef - 93% lean, or ground turkey
    Onion - fresh or dried - I use 3 whole, or about 1/2 cup dry
    Tomato or vegetable juice - I use low sodium, 46 oz (you can use less and add water)
    beef boullion - low or no sodium, 2-3 cups worth (no sodium comes in packets, each packet makes 1 cup broth)
    black pepper, chili powder, parsley - to taste

    Brown the meat & drain - I cook the onions with the meat. Add everything else and let simmer til done, or put in the crock pot for a few hours. You can add barley or brown rice near the end, if it's thick add a little water.

  • Oven fried Chicken

    Chicken pieces (whatever is on sale, although boneless breasts are of course my favorite)
    Italian Bread Crumbs

    Preheat oven to 350 degrees. Beat one or two eggs (you can use whites only), put a small amount of bread crumbs onto a plate, dip each piece of chicken in the egg, then coat with breadcrumbs. Place on a baking sheet sprayed with cooking spray. Add more eggs or breadcrumbs as needed. Spray coated chicken pieces with cooking spray and bake for 35-45 minutes, or until cooked through. Just cut up chicken breasts and do the same to make healthy chicken nuggets.
