This is a few more ingredients, but it's so quick & easy. You can easily half or quarter the recipe - I'll list the amounts I use, it makes about 8 quarts, I have a family of 6 and we have (and like) leftovers.
2 lbs Frozen mixed vegetables
2 lbs Ground beef - 93% lean, or ground turkey
Onion - fresh or dried - I use 3 whole, or about 1/2 cup dry
Tomato or vegetable juice - I use low sodium, 46 oz (you can use less and add water)
beef boullion - low or no sodium, 2-3 cups worth (no sodium comes in packets, each packet makes 1 cup broth)
black pepper, chili powder, parsley - to taste
Brown the meat & drain - I cook the onions with the meat. Add everything else and let simmer til done, or put in the crock pot for a few hours. You can add barley or brown rice near the end, if it's thick add a little water.
