Who is it that writes the books for the restaurant copycat recipies?

I know people have told me before and I have heard word of a guy who writes books that tell you how to make your favorite restaurant dishes... but I can't recall who it is! lol

  • As a retired chef, I have to tell you that many of the recipes are nothing like what is served in those restaurants. My apprentices did a project, getting a carry out from the restaurant, and making the recipes from the copycat cookbook, then having a panel compare the two. Most were way off. The recipes in and of themselves were fine, but they just weren't similar to the restaurant food.
