  • Halloween Orange and Black Quesadillas with Green Ghoul Drool (Salsa Verde) for dipping
4 cups steamed pumpkin/squash (cut into 1/2 inch cubes)
    4 teaspoon oil
    1 cup black beans
    4 green onions (chopped)
4 handfuls cheese (grated, cheddar cheese and/or Monterey jack cheese)
    8 large tortillas
    Directions:
    1. Mix the squash, black beans, and green onion.
    2. Melt a touch of butter in a pan. Place a tortilla in the pan and top with ΒΌ of the pumpkin mixture, the cheese and the remaining tortilla.
    4. Fry until both sides are golden brown and the cheese has melted. (Tip: To flip, place a plate on top of the quesadilla in the pan and flip so that it ends up on the plate and then slide it back onto the pan.)

  • Brains on the Half Skull

    2 medium potatoes
    8 ounces thin spaghetti
    14 ounces spaghetti sauce

    Preparation:
Preheat the oven to 400 degrees. Wash the potatoes and cut them in half crosswise. Place the potatoes cut side up on a baking pan and bake for 40 minutes. While the potatoes bake, prepare the spaghetti in a medium-sized pot according to the directions on the package. Then carefully drain the cooked spaghetti in a colander over the sink. A few minutes before the potatoes are ready, begin to heat the spaghetti sauce (blood) in a small pot. Remove the potatoes from the oven. Then scoop out the insides of the potatoes. You won't need the insides for this recipe, the empty shells will serve as the skulls. When the sauce begins to boil, remove it from the heat and combine it with the cooked spaghetti to make brains.
