  • No, pancake mix will not work. Crepes are much thinner and (iirc) not sweetened. Go to Food Network's website and look for a recipe there. The one by Alton Brown is particularly good, I've made it before with a lot of success.

  • 1 1/2 c. milk
    1 c. flour
    Pinch of salt
    1 egg
    1 egg yolk
    1 tbsp. melted butter

Sift the flour with the salt into a bowl. Make a well in the center and add the egg and egg yolk. Pour in the milk slowly, stirring constantly and, when half is added, stir in the melted butter. Beat well until smooth. Add the remaining milk, cover and let stand at room temperature for at least 30 minutes before using. The batter should be the consistency of light cream.

When cooking, tilt pan so that the batter spreads evenly over bottom and sides. Cook until the bottom is golden brown, lift with a wide spatula, turn over and repeat. Makes 18 crepes.

You can fill it with preserves, sour cream, sausage, nutella, pretty much anything... Super yummy!

  • Ingredients
    4 eggs, lightly beaten
    1 1/3 cups milk
    2 tablespoons butter, melted
    1 cup all-purpose flour
    2 tablespoons white sugar
    1/2 teaspoon salt
    Directions
In large bowl, whisk together eggs, milk, melted butter, flour sugar and salt until smooth.
Heat a medium-sized skillet or crepe pan over medium heat. Grease pan with a small amount of butter or oil applied with a brush or paper towel. Using a serving spoon or small ladle, spoon about 3 tablespoons crepe batter into hot pan, tilting the pan so that bottom surface is evenly coated. Cook over medium heat, 1 to 2 minutes on a side, or until golden brown. Serve immediately.

  • Pancake mix will work in a pinch if you plan to use them with sweet toppings. Just use extra eggs & milk. I've done it before and they tasted amazing. I actually got the idea from an old friend who's mom would make them that way for us.
