My favorite standby is chicken and vegetables cooked in the oven. I rub raw chicken breasts with herbs and minced garlic and lay in a pan lightly coated with olive oil. Then I chop a vegetable medley of potatoes, yams, carrots, parsnips, onions, garlic, leeks, and fennel in some combination or other. Bake at 400 for 20-30 minutes and it's done.
