If I make them for breakfast I fill them with jam/jelly/preserves (I love apricot) and drizzle a vanilla sugar glaze or powdered sugar on them, or I fill them with scrambled eggs, cheese, sausage or bacon, and rotel (like a breakfast burrito mix). I've had them filled with scrambled eggs, ham, and cheese and drizzled with hollandaise sauce too.
If I make them for dinner I usually fill them with chicken. Sometimes I use basically what I'd put in chicken enchiladas, and sometimes I make it a little more delicately spiced and cover with a cheese gravy type sauce.
