canned pumpkin

Why is the canned stuff so much darker than the fresh stuff I made from actually baking the pie pumpkin? Do they add something to it?
I made pumpkin bread from scratch today

  • Apparently there is something called a cooking pumpkin which has a darker color to it which in turn would create a darker puree. Which leads me to believe that the pumpkin puree you buy in the can is made using a different variety of pumpkin to taking a pumpkin and creating your own puree from a pumpkin bought at a local garden center. I always wondered that myself.
