Are you making a special meal for Halloween?

If so, what are you making? Do you make the same thing every year?

  • Well, I'm making a ham, fresh greeen beans and mashed potatoes with gravy. But, we went trick or treating last night, this was just because I found an $19 ham on sale for $7.50.

  • Orange and Black Quesadillas with Green Ghoul Drool (Salsa Verde) for dipping
    4 cups steamed pumpkin/squash (cut into 1/2 inch cubes)
    4 teaspoon oil
    1 cup black beans
    4 green onions (chopped)
    4 handfuls cheese (grated, cheddar cheese and/or Monterey jack cheese)
    8 large tortillas
    1. Mix the squash, black beans, and green onion.
    2. Melt a touch of butter in a pan. Place a tortilla in the pan and top with ΒΌ of the pumpkin mixture, the cheese and the remaining tortilla.
    4. Fry until both sides are golden brown and the cheese has melted. (Tip: To flip, place a plate on top of the quesadilla in the pan and flip so that it ends up on the plate and then slide it back onto the pan.)
