Recipes for a healthy quick inexpensive meal?

  • I make turkey loaf.
    1 lb ground turkey
    1 egg
    1/4 c milk
    1/4 c grated Parmesan
    1/2 c plain breadcrumbs (preferably whole wheat)
    1 TBSP each parsley and basil
    Salt and pepper to taste
    Ketchup for the top
    Healthy optional additions: spinach, cauliflower and/or carrot puree

    Preheat oven to 375. Mix everything except the ketchup with your hand in a large bowl. Put in a glass loaf pan or similar sized glass baking dish (if you don't have a small one, you can shape it and put it in on a larger one). Bake until thermometer inserted reaches 170 degrees. Time varies, usually takes about an hour.

    I make this with mashed potatoes and steamed broccoli. I often add some cauliflower puree to the potatoes (not too much, so you don't mess with the flavor). Use some buttermilk in the potatoes to add flavor and thickness without packing the calories (don't add a ton, because it's kind of tangy). It will help reduce the amou
