Rinse cooked pasta or don't rinse????

I rinse mine with hot water. I notice Rachael Ray doesn't. What is correct? I think if you don't its too starchy. What do you do?

  • I read someplace not to rinse cooked pasta because the starch that remains on the hot pasta helps the sauce to stick better to it.

  • I only rinse if I'm turning it into a cold pasta salad. Otherwise, no.

  • Don't rise, but cook to al dente and finish cooking it right in the sauce. NEVER rinse the pasta!

  • Oh I forgot something! Before rinsing your pasta, take a ladle full of the cooking water. Because it has the starch, it's great for thinning the sauce if it gets too think and it helps the sauce cling to the pasta better, so it's a good idea to add a little bit of it to the sauce. Just check on the seasoning because since it's salted, you can end up with a salty dish.

  • My husband's 92-year-old aunt (born in Italy) told me never to rinse it. If you rinse it, then it's harder for the sauce to stick to it. To keep it from sticking together, first I don't overcook it, then put a tablespoon or two of your sauce and mix it with the pasta. If I'm making cold pasta salad, I put a little of the dressing on it while it's still hot, then let it cool. It doesn't stick together that way.

  • You're not supposed to rinse pasta because you get rid of all the starch that way.
