  • Cheap and Easy Casserole

    1 lb meat, cooked
1 lb pasta or rice, prepared
2 c. (or one can) vegetables (one, or a combination!)
11/2 c. sauce, condensed soup, or gravy
Favorite spices, including salt and pepper, to taste
    1 c. shredded cheese

Combine together except cheese, bake in oven until hot and bubbly--about 30 minutes. Top with cheese, bake additional 10 minutes.

This will work with just about any combination! :) You could make a different combination for each night of the week--it's easy and economical! :)

  • Thanks, ladies! They all sound good! Found some chicken breasts for panko-coated, oven-baked chicken tenders and potatoes and fried okra.

Thought of the sauteed chicken/onions/peppers idea first, LOL, but out of peppers. Definitely going to do the casserole idea and the goulash is fave of hubby's that I forget about because it's SO easy :) Have a pork roast thawing for a crock pot roast tomorrow. The vegetable beef soup would be the fastest if we had any. :) Thanks again! :) This week is covered. Blessings.
