How can I cook butternut squash?

ive looked on websites, but none sound interesting. What kind of recipies have u tried and liked?

  • Cut in half,scoop out the guts,put in brown sugar and nutmeg and bake at 350 for an hour

  • Cut it in half, remove seeds, brush with olive oil and bake until almost done. Then fill the hole where the seeds were with stuffing or seasoned wild rice and cheese. That's the only way I've had it, and it's pretty good.

  • cut in half, scoop out the seeds, take a glass baking pan, add some water. Put salt and pepper on the squash. place open face down, cover with plastic wrap, and microwave for 20 minutes. When it is soft, scoop it out and mix in butter and brown sugar.

  • hey, puree it in a blender )after slicing, gutting and peeling (sort of hard but worth it) and boiling til softish of course. then you add chicken stock, a little heavy cream and a little sauteed garlic and onions... and a bit of nutmeg!! mmmm! peopel last night here were comparing butternut squash soup recipes!!

  • There's one where you cube it and add it with this special flavored cheese and noodles I think for a complete meal. It came from one of those magazines at the checkout line. ....Crumbs.. Taste of living or something like that maybe?

  • SLICE IT.. THEN STACK IT UPRIGHT IN A BACKING GLASS PAN ON STOVE MELT BUTTER AND GARLIC THEN ADD PANCO BREADCRUMBS AND PARM REAL CHEASE LOTZ!!!! PUT IT ON TOP ..BAKE TILL SOFT N BROWN ON 350 SSSOO YUMMY.

  • Dice it into small pieces. Place in ovenproof baking dish with 2 cups uncooked risotto, 5 cups chicken stock, and about 4 tablespoons of butter. Bake at 350 degrees for about 35 or 40 minutes. Remove from oven. Stir in about 12 slices of cooked and then crumbled pancetta or bacon and about 3/4 cup of parmesan or to taste. Delicious- Butternut squash and Pancetta Risotto and you don't even have to do all the stirring you usually have to do with risotto.
