do you have a fave mexican family dish?

we do a lot of taco salad and burrittos...need more ideas pls!

  • Taco Soup
    1 lb ground beef
    1 medium onion, finely chopped
    1 (15 oz) can pureed tomatoes
    1 (15 oz) can tomato sauce
    1-2 cups water
    1 (15 oz) can pinto beans, rinsed and drained
    1 (16 oz) can whole kernel corn, drained
    1 envelope taco seasoning mix
    shredded cheese, chopped tomato and corn chips
    Brown beef and onion in large soup pot. Add tomatoes, tomato sauce, water, beans corn and taco seasoning. Bring to a boil. Reduce heat and simmer 5-15 minutes. Top each bowl with cheese, chopped tomato and corn chips.

  • Mexican food is our staple. Try your hand at making small (coffee cup size) corn tortillas--just buy the Masa Harina in a flour bag at the grocery (even Walmart carries it), add a bit of water until it pulls together, then divide into small balls and press between two sheets of plastic to form it. Fry on each side on medium heat.

    Mine don't roll too well, so we pile things (black beans, cheese, ground turkey) on them like a tostada. Also nice for a different flavor of quesadilla if you put cheese between two tortillas.

  • I like taco salads, taco casserole, spicy chicken & rice, plain ol' tacos ofcourse.. lol.. sorry probably not much help but GL finding some new recipes :)

  • My family likes this:
    TACO RING

    1/2 pound ground beef, cooked & drained (you could also use ground turkey)
    1 pkg. (1.25 oz.) taco seasoning mix
    1 C. shredded Cheddar cheese
    2 tbsp. water
    2 pkgs. (8 ozs. ea.) refrigerated crescent roll dough
    1 med. green bell pepper (optional)
    1/2 head lettuce
    1 med. tomato(optional)
    1 sm. onion(optional, I use fine chopped & put in with meat)
    1/2 C. whole pitted black olives (optional, I usually use chopped olives)
    1 C. salsa
    Sour Cream

  • i do have something that i make a lot that the kids like but i'm not sure if it's considered "mexican" lol. i buy the packet of the REGULAR taco seasoning (cause the one made for chicken isn't that good) and use that to season some chicken, put that in a wrap with lettuce, shredded cheese and top with salsa.

    Preheat oven to 375 degrees. Combine meat, seasoning mix, cheese & water in 2-qt. Batter Bowl. Arrange crescent triangles in a circle on the 13" Round Baking Stone, with bases overlapping in center & points to outside (there should be a 5" diameter circle in center). Spoon meat mixture over rolls. Fold points of triangles over filling & tuck under base at center (filling will not be completely covered). Bake 20-25 min. or until golden brown. Serve with Salsa, lettuce & sour cream.
