what are some good meals that can be made ahead and frozen?

trying to make some for when baby comes :)

  • Chicken and rice casserole (on the back of the cambell's cream of chicken soup can) Spaghetti, enchilada sauce and chicken, Then all you have to do is layer with tortillas and cheese.

  • soups, lasagna, mini meatloaves, meatballs, taco meat (or any other seasoned ground beef/turkey)... check with your friends and family members to about bringing you dinners for a couple weeks... i just organized that for my cousin through and she had dinners for the first 4 weeks provided...

  • When you make meals just double it then use the leftovers to freeze using tin pans from the dollar store that way all you have to do is bake it

  • Here's a good one
    Baked Chicken Spaghetti
    ¼ cup butter
    1 cup chopped onion
    1 cup chopped celery
    ½ cup chopped green pepper (optional)
    1 (8 oz) packaged sliced fresh mushrooms
    1 (14 oz) can chicken broth
    1 (10 ¾ oz) can cream of chicken soup
    1 (10 ¾ oz) can dream of mushroom soup
    1 (14.5 oz) can diced tomatoes
    1/2 cup sour cream
    1/2 teaspoon garlic salt
    dash salt & pepper
    3 ½ cups cooked chicken, cubed
    2 cups shredded sharp white Cheddar Cheese
    1 (12 oz) box angel hair pasta, cooked al dente
    3/4 cup panko bread crumbs
    2 Tablespoons butter, melted
    Preheat oven to 350. Spray a 13x9” baking dish with nonstick cooking spray.
    Melt ¼ cup butter over medium-high heat in a skillet. Add onion, celery, green pepper(if using) and mushrooms; saute for 5-6 minutes or just until vegetables are tender.

    In a large bowl, combine onion mixture, broth, soups, tomatoes, sour cream, and seasoning. Stir in chicken and cheese. Add pasta, tossing gently to combine. Spoon mixture into prepared baking dish. In a small bowl, combine bread crumbs and 2 tablespoons melted butter. Sprinkle evenly over casserole. Bake for 30-40 minutes or until hot and bubbly. Serve immediately.
    Makes 10-12 servings. I usually divide this in half and freeze part for later.
    This freezes well.
