I'm looking for a recipe

for enchiladas that bake with rice in the pan, but not in the roll. I've been googling my little heart out with no luck, so if you have any I'd be grateful.

  • No, my friend had that stauffers frozen stuff... and it was tasty. I want to kind of replicate it without all the frankenfoods.

  • Just an idea: make Spanish rice, put on the bottom of the baking, make your enchilades, add to the rice and cover and bake.

  • Looked on the Stouffer's site and is it the chicken enchiladas with cheese sauce and rice?
    It is seasoned rice with vegetables and a cheese sauce. Hope this helps.
    Let me know how it turns out, sounds yummy to me.
