  • For dressing I use:
    2 packages prepared corn muffin mix
    3-4 stalks celery, chopped
    1 med onion, chopped
    1 egg
    Chicken broth or pan drippings (prefer broth)

    Bake cornbread as directed the day before, cover and let sit at room temp over night. Break bread into large chunks in a mixing bowl, add celery, onion, egg, and season (I use salt, pepper, parsley, thyme, sage, basil) and mix well. Add enough chicken broth to moisten the mixture so that you can form it into a buttered baking dish. Bake 30 minutes or until golden brown on top. You can also add dried cranberries or giblets if you like, and more or less celery and onion depending on taste.

  • Oh I thought of salad dressing when I read homemade dressing not stuffing. OP - did you mean stuffing or actual salad dressing?

  • Cranberry Sauce -

    * 12 ounces cranberries
    * 1 cup white sugar
    * 1 cup orange juice

    1. In a medium sized saucepan over medium heat, dissolve the sugar in the orange juice. Stir in the cranberries and cook until the cranberries start to pop (about 10 minutes). Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools.
