2 Bumps

I have 4 boneless, skinless chicken breasts defrosted for dinner tonight...

only I have no idea what to do with them. Any quick, simple ideas/recipes?

  • chicken and yellow rice - boil the chicken til done and cut it up, add to your rice.
    oven baked chicken - coat chicken in mayo or egg, roll in breadcrumbs, bake at 350 for about 20-25 minutes (depending on thickness)
    parmesan crusted chicken - cut breasts in half lengthwise (in other words, filet them), lay them on a baking sheet, spread mayo over the top, sprinkle breadcrumbs over that then shredded parmesan over that. bake at 275 for 15-20 minutes.
    chicken stirfry- sautee vegetables of your choice in a skillet with seasonings of your liking and add the chicken either whole or cut up
    italian chicken - marinade the breasts in italian dressing for atleast 30 minutes then bake at 350 or cook in frypan.

  • make chicken and rice
    boil rice, add 1 can cream of mushroom, cream of celery or cream of chicken anything cream of
    then add milk,
    1 pkg onion soup mix, mix everything together and add to a cake pan
    some shredded, velevetta cheese put chicken on top and bake this kind of takes a while to throw together and bake.
    Fry or bake it and add some egg noodles to it with a bit of butter
    make chicken salad that's what I am eating right now with mine

  • mix 3 tablespoons honey or agave,1 minced garlic clove or powder equivalent ,1/2 tea. of grated ginger,1/3 c low sodium soy,dice 1 onion add a bit of o.j if you want.Cutting the chicken up into chunks helps it absorb flavor marinate for 15 to 30 minutes if you have time.Put in pan cook in oven 350 with marinade till internal temp is 160 or cook in skillet with marinade.Ifyou double the marinade and add 2 T veggie oil it will toss with angel hair great.We add broccoli or asparagus.

  • Try cutting them up in little chunks and using them instead of beef in Hamburger Helper. It's really good with the stroganof one and the cheesy ones.

  • I would season them and then fry them with no batter in a skillet lightly coated in (whatever you use) then either put it in a salad. rice o roni or maybe some pasta noodle (the ones that come with seasoning)

  • bake them with olive oil and herbs in a pan with a little water at the bottem and cover with aluminum foil, serve with rice and your fav veggie

  • Well I make a no fry chicken bake with chicken breasts.
    Take 1 c mayo or salad dressing 1/2 c milk mix add your favorite spices. (Italian, salt, garlic work for me)
    Several cups of corn flakes. crunched up in a bowl.
    A pan sprayed with cooking oil.

    Dip the chicken breasts in the milk mixture then in to the corn flakes. Place in pan.

    Bake in an oven at 350 for about 20-30 min. Depending on thickness. Great tasting and good for you too.
