Why does Sour Milk have an expiration date? It's already sour... What's it gonna do? Turn to cheese?

Although it's not commonly found in the US, lost of countries in South America and Africa sell Sour Milk the way we do non-Sour Milk... But for some reason the bottles have expiration dates on them... Do you think there is actually something that can happen beyond going "bad" or is it all about making the money?
