How about cutting out a picture of a turkey on colored construction paper (fall colors), then having each child tell you what they are thankful for, then you type it up, cut it out & each of them can glue it to their turkey that they've decorated? Be sure to have them date it for posterity :)
If you can collect dry leaves, you can make a "stained glass" type thing. I remember when I was in kindergarten 30-odd years ago, we took a long piece of wax paper & folded it over a wire hanger, then put dried leaves between the two halves of waxed paper, then ironed it all together (heat from iron will melt wax paper together). Then we hung them in the classroom windows. You could probably use string istead of the hanger & make them smaller, maybe only 1 or 2 leaves, and they could double as holiday ornaments.
