  • it's a little ghetto but my husband and I love to smear the breasts with sour cream and then completely cover in crushed ritz crackers. bake until cooked thru. moist, buttery, awesome.

  • Put the breasts between wax paper and pound them out flat and even, then sautee until browned, remove them from the pan and deglaze with white wine and lemon juice, let it bubble up nicely for a few minutes, add a pat of butter, whisk until emulsified, correct the seasoning with salt/pepper, serve with angel hair pasta/spaghetti with garlic and oil.

  • One idea would be to top it with salsa and bake them. The other night I made basil pesto (super simple) and smeared it onto the chicken and then rolled them in whole wheat bread crumbs and baked them in the oven. It turned out sooo tasty too. DH said it was the moistest chicken he has ever had.

  • A favorite of mine and in my house, is cutting the uncooked chicken into strips and wrapping them with uncooked bacon, then put it in a pan with a can of cream of chicken (or mushroom) soup mixed with a can of milk. then cook it in the oven and serve over pasta.
