Thanksgiving dinner for 2?

It's gong to be just hubby and I for Thanksgiving this year. I want to cook something special for us, but I don't want to cook a whole huge meal when we will just end up throwing most of it away. Any suggestions?

  • Cornish game hen? Turkey breast? I would till do the mashed potatoes, stuffing, sweet potatoes, just in smaller amounts. I really like that meal.

  • I make "thanksgiving" plenty of times through out year for DH and I. I make smaller scale of meal (turkey breast) and after sandwiches the next day I make a pot of Turkey Noodle Soup with homemade noodles. It is great. I never throw out left overs. You can make them into different meals for a few days.
