How to eat on busy schedules?

With busy schedules and always on the run, how can we eat healthy when it's so easy to take the easy way out and "eat out"? I would like to keep sandwich stuff around for quick meals, but what kind of sandwich can i eat that is healthy for me? The cold cuts are processed meats, and not good for us, and they are high in sodium which i am cutting back on. So what is a good quick healthy meal to eat when time is short and we are very busy? Sometimes when i am off on Saturday, i get to cleaning house and don't have time or don't want to quit cleaning long enough to cook and eat something, so what is a good meal or sandwich i can grab for busy times?

  • grill your own boneless skinless chicken breasts and slice thin, baking them or using an indoor grill (george foreman), or crock pot would work too, as would turkey breast, whole chicken, beef roast, etc. cool and slice, or shred or chop. make into sandwiches or wraps would be even better in my opinions, with baby spinach, thin sliced bell peppers, thin sliced onions, and other veggies.

  • Well we used to eat a lot of pasta on busy nights. Now it is black beans and brown rice in a bowl to go.

  • crock pots. We make meals in those. Throw the food in crock pot in the morning and let cook all day on low.
