  • turkey soup probably lentils and veggies with the bones, small bits and dark meat. possible a turkey pie with the leftover white meat.

  • We eat them. Does no one eat leftovers? I always cook enough to have leftovers at least one day (that's with any meal). Thanksgiving usually gives us 2-3 days of leftovers. We're having it all for dinner tonight and tomorrow (I'll probably have some for lunch, too). To me, that's the best part of Thanksgiving...I don't have to cook for the next 2-3 days, lol.

  • A second dinner, then maybe sandwiches (turkey slices), then sandwiches from turkey salad (with grapes, walnuts, celery, apple and miracle whip), then turkey soup. :-d

  • Freeze some. Turkey salad sandwiches. Turkey Tetrazinni
    Turkey Tetrazzini
    8 oz spaghetti
    2 Tablespoons butter
    2 cups fresh sliced mushrooms
    1 small onion, diced (about 3/4 cup)
    1/2 green pepper, diced (about 3/4 cup)
    2 stalks celery, diced (about 3/4 cup
    2 cans cream of chicken or cream of mushroom soup
    1soup can portion (or 1 1/4 cups) milk
    2 cups cooked cubed turkey (or chicken)
    1/2 cup grated Parmesan cheese
    1/4 cup minced fresh parsley
    Cook spaghetti according to package directions, but undercook just a bit; drain. Meanwhile, in a large saucepan, melt butter and cook mushrooms, onion, celery and green pepper until tender, stirring occasionally. Stir in soup, and milk; stir to mix. Add cooked spaghetti to soup mixture. Add turkey, Parmesan and parsley. Toss lightly until spaghetti is coated. Pour into baking dish. Sprinkle more Parmesan on top if desired. Bake in oven for about 30 minutes, or until bubbly
