Do you make turkey soup with the carcass?

I do. My family loves it. I add rice, onions, celery, carrots and peas.

  • I just did this today... turkey carcass with onions, carrots, celery, bay leaves, peppercorns, topped with 3/4 chicken broth and 1/4 water, cooked it down all day...strained the goop, strained the broth through cheese clothe and poured it into a fat seperater....picked out the good meat, added some more leftover turkey and back on the stove with fresh chopped onions, carrots and celery and egg noodles. Made enough for an army...still have to portion out and freeze. Yum!

  • I do. But before I add the rice and other things, I strain with cheese cloth.

  • i was going to make stock, to make soup, but i got up the morning after i cooked my turkey and realized i forgot to put the carcass & other non-edibles in the fridge, so i did not do it.
