Corn Pudding

I'm in need of an Corn Pudding recipe. Please help

    Here's a corn casserole recipe that I used and it's good.  I just add a little salt.  I'm assuming that it must be similar to corn pudding.  This is on the lower side of fat and calories.

  • Corn Pudding

    1/3 cup butter
    1/2 cup diced red pepper
    1/2 cup diced onion
    1/2 teaspoon minced garlic
    3/4 cup flour
    3 cups milk
    Dash of nutmeg
    2 dashes Tabasco
    3 cups sweet corn (fresh or thawed frozen)
    8 eggs
    Salt and pepper to taste

    In a saucepan, melt the butter and saute the red pepper, onion, and garlic over medium heat until soft. Add the flour, and stir it into the butter and vegetables. Add the milk. Stirring constantly, continue cooking over medium heat until thickened. Add the nutmeg, Tabasco, corn, salt and pepper. Combine the ingredients and simmer for 5 minutes, stirring occasionally. Take the pot off the heat, and transfer the ingredients to a mixing bowl. Let the mixture cool until warm. Blend the eggs into the cooled mixture. Puree part of the mixture, either with a hand-held blender or in a food processor. Transfer the mixture to a buttered, 9-by-11-inch casserole dish.

    Bake in a preheated 350-degree oven until the casserole is firm enough to move as one mass when gently touched, 35 to 45 minutes.
