I had a dish several years ago that I can't remember the name of but I believe it was Mexican and had chicken kind of shredded in a red sauce or gravy. Has anyone heard of or had this before?

I have looked online and apparently am not looking in the right place or using the right words because nothing close comes up. I was thinking the dish was not terribly complicated and didn't use tons of things. It seemed relatively simple but it has been a while since I've had it. Any help is appreciated.
