Any corn recipes? My husband bought me all this corn that was on sale and I have to get rid of some.

Any ideas?

  • Well... at least since it's canned it will store for a year...

    I like cream of corn soup, and corn chowder...

    Saute a chopped onion in olive oil for a few minutes, add a chopped carrot and celery stalk, chopped, and cook at med-hi until the onion is softened and translucent. Pour in 2 cups of chicken (vegetable or mushroom) stock and a cup of water. For chowder add 6 diced potatoes. Bring to a boil (cook until potatoes are done) then add 2 cans of corn, drained. Puree it if you like it smooth, don't if you want it chunky. Add 1 cup of heavy/whipping cream and freshly ground pepper to taste, heat through and serve.

    You can add herbs (I like tarragon with corn) or a couple of dried chilies to make it spicy... without the spuds, it's a soup you can make in about 20 minutes.

  • Corn Casarole
    1 can cream corn
    1 can corn
    8 oz sour cream
    1 stick butter
    salt and pepper
    mix it all with a box of Jiffy corn bread
    back for about 45 minutes at 450degrees

  • check the expiration date on the can--I am sure you have a while--LOL just have corn with meals more often then any other veggie for awhile!! LOL

  • You could also make veggie soup. Or add corn to your taco stuffing.
