butternut squash soup

I could use a good recipe. I prefer the butternut soups with out nutmeg, clove, and cinnamon.

  • Butternut Squash Soup
    6 tablespoons chopped onion
    4 tablespoons margarine
    6 cups peeled and cubed butternut squash
    3 cups water
    4 cubes chicken bouillon
    1/2 teaspoon dried marjoram
    1/4 teaspoon ground black pepper
    1/8 teaspoon ground cayenne pepper
    2 (8 ounce) packages cream cheese
    1.In a large saucepan, saute onions in margarine until tender. Add squash, water, bouillon, marjoram, black pepper and cayenne pepper. Bring to boil; cook 20 minutes, or until squash is tender.
    2.Puree squash and cream cheese in a blender or food processor in batches until smooth. Return to saucepan, and heat through. Do not allow to boil.

  • I make it like this: saute a whole onions thinly sliced in a bit of olive oil, then add the squash and 3 cubes of vegetable broth (Maggie) with the amount of water according to how much soup you want to make. After they are soft, it takes about 45 minutes or so boiling, blend it with hand blender or any blender until smooth, add half a cup of whipped cream cheese and mix until the cheese melts, if you want thicker creamier soup, ad a couple of spoonfuls of cornstarch to a couple of spoons of water and pour in while it is boiling, until it thickens to your taste, yummy!!!! oops, I forgot to mention spices, I put in a bit of oregano salt and pepper.
