Key Lime Muffins

I received a random recipe magazine today and it had a recipe for the muffins. Sounded good to me so I'm sharing....enjoy!

2 Cups all-purpose flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 cup sugar
1/3 cup milk
2 large eggs, lightly beaten
1/4 cup vegetable oil
1 teaspoon grated Key lime zest
1/4 cup fresh Key lime juice

Preheat to 400 degrees. Combine the flour, baking powder, salt, and sugar in a large bowl. Make a well in the center. In a separate bowl, combine the milk, eggs, oil, zest, and juice. Pour into well in the flour mixture and stir just until moistened. Spoon into prepared cups, filling three-fourths full. Bake 18 minutes or until lightly browned. Transfer to a wire rack to cool completely. Yield: 1 dozen muffins
