  • Of course you can use whole milk. I don't ever cook with evaporated milk because imo it tastes foul, and there is nothing that can be added to it to fix that.

  • I used hemp milk the last time I made this:

    Mushroom crustless quiche

    1/2 lb mushrooms sliced
    1 bunch green onions, chopped
    3 Tbls. butter
    3 eggs
    1/2 c. + 1 Tbls. pancake mix
    1/2 tsp. salt
    1/4 tsp. pepper
    1/2 tsp. nutmeg
    1 1/2 c. milk
    1 1/2 c. shredded jack cheese (I prefer swiss)

Saute mushrooms and onions in butter. Beat eggs, add pancake mix, mix till smooth; add spices and blend one minute. Slowly add milk to egg mixutre. Mix thoroughly. Butter a 9 inch cake pan. Layer bottom of pan with half of the mushrooms and onions. Add cheese, then top with mushrooms and onions. Pour egg mixture over top. Bake in oven at 350 degrees for 30-35 minutes.
