  • Oil! :D Seriously, there is a huge amount of it in my pumpkin chocolate chip bread. It's not exactly healthy, but it's SO DELICIOUS!

  • Applesauce in place of oil will also make it moist.

  • Eh, i've never had much success with moist bread made with applesauce. I'd much rather have oil. Now if i'm trying to be HEALTHY then yeah, i'll use applesauce instead!

  • I agree ladies, oil is the way to go and my pumpkin bread has a 1/2 cup of orange juice that gives it a very interesting (in a good way!) flavor

  • Not overcooking it. Put an oven-safe thermometer in, and when it reaches 205, pull it out of the oven.

  • I add 2 cups grated zucchini to my pumpkin bread (makes 3 loaves).

  • i use very little oil. my favorite recipe has honey in it instead of white sugar - that really helps. figuring out the right temp (i usually bake it a little lower than the recipe says). also in my experience the recipes that have other stuff in them are moister too, like if there are apples (chunked or grated) or something in it too.
