  • Bacon & Egg Breakfast Casserole

    1 lb. bacon
    6 eggs
    2 cups milk
    1 teaspoon mustard powder (optional)
    1 teaspoon salt
    1 cup Cheddar cheese, grated
    6 slices of bread
    Grease a 9x13" glass baking dish and set aside. Fry the bacon, drain on paper toweling, and cut into 1" pieces. Cube the bread into 3/4" pieces and set aside. In a large bowl, beat the eggs. Add the milk, mustard powder, salt and blend well. Stir in the bacon, cheese, and bread cubes. Stir well to combine. Pour the mixture into the baking dish, cover with plastic wrap, and refrigerate overnight. Preheat the oven to 350 and bake 1 hour. Serves 8

  • Apple Spice Muffins
    1 cup white sugar
    1/3 cup vegetable oil
    1 egg
    1/2 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon salt
    1 teaspoon baking soda
    1 cup applesauce
    2 cups flour
    1 apple, cored and chopped
    Cream sugar, oil and egg. Add cinnamon, ginger, cloves, nutmeg, salt, baking soda and applesauce and stir well. Stir in flour until smooth. Fold in apple. Fill well greased muffin cups. Bake at 325 degrees 25 minutes or until firm to the touch. Remove from pan and cool slightly.

  • Cream Cheese Danish
    2 packages crescent rolls
    11/4 cups sugar
    Two 8 oz packages cream cheese, softened
    1 stick butter
    2 teaspoons cinnamon
    3 teaspoons vanilla
    Preheat oven to 350. Press one packages. of the crescent rolls in a 9 by 13 in. pan. Mix cream cheese, 1 cup of sugar, and vanilla. Spread mixture over the crescent rolls. Using a rolling pin, roll out the other package of rolls, dusting the surface with flour to keep them from sticking, then place them over the cream cheese mixture. Melt the butter and pour it over the top of pastry, mix the remaining ΒΌ cup sugar and cinnamon together and sprinkle over melted butter. Bake in a 350 degrees oven for 35 minutes.

  • I do Christmas Brunch every year: Ham, bacon, sausage, O'brien potato's, variety muffins, homemade biscuits/gravy, eggs scrambled, fresh fruit salad, coffee, tea, orange juice, milk. Seems like I'm forgetting something :)

  • Get two cans of French bread (like Pilsbury). Connect the two loaves into a circle and bake. When it's done, slice it through the center to create a top layer and a bottom layer. Use any cold cuts and cheeses you like, lettuce, tomatoes, etc and make a round sub sandwich. It's pretty impressive. (got the recipe from Pampered Chef).

    Dice up some ham into cubes or cook breakfast sausage in loose crumbs (like you'd cook hamburger for sloppy joes). Dice potatoes into cubes and place in the bottom layer of a baking dish. Layer the cooked meat on the potatoes. Add a layer of diced onions and green (or red) peppers. Scramble enough eggs (seasoned to taste with salt and pepper) to cover all. Bake 35 minutes at 350 degrees. Add a layer of shredded cheese (cheddar, colby, whatever you like) and bake an additional 5 mins or until cheese is melted. Makes a wonderful brunch casserole.

  • Ham & Egg Cakes with Plum Sauce

    * Nonstick cooking spray
    * 3/4 cup cooked rice
    * 1 teaspoon cooking oil
    * 2/3 cup chopped cooked ham
    * 1/3 cup thinly sliced green onions
    * 8 eggs
    * 1/2 teaspoon salt
    * Lettuce leaves (optional)
    * Sweet-and-Sour Plum Sauce (see recipe below)


    1. Preheat oven to 375 degree F. Lightly coat twelve 2-1/2-inch muffin cups with nonstick cooking spray. Press about 1 tablespoon cooked rice into the bottom of each prepared muffin cup; set aside.
