How do you make your own sausage with venison! Help! We are getting a 25lb bag of trimmings!

  • Here is a simple enough recipe for polish sausage. They sell seasoning mixes though. If you haven't made any you should start with a mix probably.
    3 lbs trimmed venison, cut into 1 inch cubes
    2 lbs 25% fat pork shoulder or trimmings, cubed
    2 tablespoons garlic powder or granulated garlic
    2 tablespoons kosher salt
    2 tablespoons sugar
    1 tablespoon fine ground black pepper
    2 tablespoons paprika
    1 teaspoon dried marjoram
    1 teaspoon ground mace
    1 teaspoon ground celery seed
    1 teaspoon of cure.
    1 cup ice water

    1. Grind the chilled venison and pork through the medium blade on your meat grinder.
    2. Mix all the cure and spices with the 1 cup of ice water.
    3. Pour the water/spice/cure combination into the ground sausage meat and mix it very well by hand to be sure of even distribution.
    4. Fry up a small patty to check the taste and fix if needed.
    5. Stuff the sausage immediately into cas

  • Ooh ooh ooh - if you have a Scheels, or Cabela's, or anything like that near you - go check out their foodie section - books about making sausage, seasoning packets, etc - perfect, IMO! I'm jealous - we usually send our trimmings to the local locker to be made into deer sticks.
