Peanut Butter Cookie Recipe??

Does anyone have a really good peanut butter recipe that doesnt call for shortning?? I've looked on the internet but I havent found one that looks really good, thanks!

  • Soft and Chewy Peanut Butter Cookies
    2 cups all purpose flour
    1/2 tsp Baking soda
    1/4 tsp Salt
    1 1/4 cups dark brown sugar, firmly packed
    1 cup salted butter
    3 large eggs
    1 cup creamy Peanut Butter
    2 tsp vanilla

    Preheat oven to 300F

    In a medium bowl combine flour, baking soda, and salt . Mix well with a wire whisk. Set aside.

    In a large bowl blend sugars together using an electric mixer set at medium speed. Add butter and mix to form a
    grainy paste, scaping the sides of the bowl. Add eggs, peanut butter and vanilla and mix st medium speed until light and fluffy.

    Add the flour mixture and mix at low speed until just mixed. Do not over mix.

    Drop by rounded tablespoons on to an ungreased cookie sheet, 1 1/2 inches apart. With a wet fork gently press a crisscross pattern on top cookies. Bake 18-22 minutes until cookies are lightly browned along the edges. Con't below

  • Transfer cookies immediately to cool surface with a spatula.

    As a variation add 2 cups coarsely chopped semi sweet chocolate bar or semi sweet chocolate chips to the flour mixture then bake as directed.

    This recipe will make 3 1/2 dozen cookies

  • These cookies are great and so ez to make.

    1 C sugar
    1 egg
    1 C peanut butter

    Mix together & drop on cookie sheet,flatten with a fork.
    Bake at 350 degrees for 10 - 12 minutes.

    While hot press a candy kiss in the center.
