Easy meals to freeze

My father in law has cancer all over his body and also a brain tumor. He is nearing death, and I am wanting to make some meals to feeze for my family as well as for my mother in law. I would like to spend a day cooking several large meals to portion out and freeze. I did a google search, but it was overwhelming. I'm really sad and overwhelmed right now, but feel like it's only going to get worse. Do you have any meals that you think are easy to make and freeze? My husband and his family mostly like "country cooking", Italian food, and Mexican food. While I prefer to eat raw/ vegan, my husband doesn't get excited about quinoa stuffed bell peppers, etc. So I'd like to serve here and make recipes my husband and his mom, brother, etc will eat. If you have a recipe to share, I'll really appreciate it!

  • I freeze everything- tacos, lasagna, soup, sloppy joes.

  • casseroles tend to fare best for freezing, although if you can find a book like "Cook once, eat for a month" or "Don't Panic, Dinner's In The Freezer", they can give you tons of options of dishes that can be frozen into individial or meal portions and use the same or similiar ingredients to simplify shopping.
