Vegan xmas breakfast?

I already had the menu planned and all the food in the house (except the eggs and milk) for xmas breakfast for 9.5 people all meat eatters. TODAY my husband comes home and tells me his sister MIGHT be in town and she is a vegan.

FIY vegans: no eggs, no milk, no meat

  • not only no milk but no dairy..basically nothing with a be keeping an eye on this post cause my sons vegan..not by choice but because of allergies...therse load fo veagan websites. but egg subsitues, and thers a great waffle/pancake recipe thats super easy to make..let me check my links and seee if i can find them for ya...

  • you could make the overnight french toast cassarole thing with soy milk instead of regular milk....i think that would work (then again it might be a disaster lol, but then again she might not be there!) gl though!

  • You could find a good vegan quiche recipe and also serve fruit.

  • Overnight French Toast
    2 large apples - peeled, cored and sliced
    3 Tbsp butter or margarine
    2 tsp. cinnamon
    1/4 cup dry sweetener of your choice
    1/4 cup maple syrup
    1 cup apple juice
    1/2 cup plant or animal milk (I use vanilla soy)
    1/2 cup yogurt (I use vanilla)
    1 tsp vanilla extract
    4-6 thick slices of day old bread
    In a saucepan, cook the apples in the butter/margarine until they start to soften. Add the cinnamon, dry sweetener, syrup and cook until the apples are nice and soft. Pour into the bottom of an 8x8 baking pan. In a large bowl, mix remaining ingredients except bread. Dip the bread into the milk/yogurt mix and layer on top of the apple mix. Pour the remaining milk mixture over the top. Cover and refrigerate.
    In the morning, preheat the oven to 350 F. Uncover the baking dish and bake for 35-40 minutes
