Recipe for a vegetables.....

I have to bring the vegetable for christmas. The main menu is turkey, ham and cheese potatoes. Does anyone have a good recipe for some sort of vegetable dish? Hopefully something easy but tasty.

  • You could double the amount for a crowd.
    Bacon Ranch Green Beans
    1 package (16 oz) frozen green beans
    Bacon fat or 2 tablespoons butter
    1 envelope dry ranch salad dressing mix
    4 bacon strips
    In a skillet, cook bacon; remove to paper towel to drain. Sauté the green beans in bacon fat remaining in skillet, or use butter. Sauté for about 5 minutes. Add the salad dressing mix and toss to coat. Just before serving, sprinkle bacon on top.

  • ZUCCHINI PARMESAN ROUNDS

    Ingredients:
    Non-stick cooking spray
    2 medium zucchini (about 3/4 pound)
    1 tablespoon olive oil
    1/2 cup freshly grated Parmesan cheese (about 2 ounces)
    1/2 cup plain dry bread crumbs
    1/8 teaspoon salt
    Freshly ground black pepper to taste
    Paprika to taste

    Prep and Cooking Time: 25 minutes

    Preparation:
    Preheat oven to 450° F. Lightly coat a baking sheet with non-stick cooking spray. Slice zucchini into 1/4-inch thick rounds, leaving green skin on. Place rounds in a resealable plastic bag with olive oil; shake to coat all sides. Combine Parmesan cheese, bread crumbs, salt, pepper and paprika in a small bowl. Press each zucchini round into the Parmesan mixture, coating on both sides. Place in a single layer on prepared baking sheet. Bake until browned and crisp, about 10 minutes. Remove with spatula. Serve warm.

  • Veggie Weggie...Pizza style but instead of sauce you use cream cheese and you put your favorite veggies on them. Another ingredient is ranch dry dressing.
